Ingredients

  • 2 medium zucchinis (grated)

  • 1 cup 240g plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic (minced)
  • 1 tbsp chopped fresh mint
  • Salt and pepper (to taste)

Instructions 

Step 1: Prepare the Zucchini

  • Grate the zucchinis into a large bowl. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture.
  • Transfer the grated zucchini to a clean kitchen towel and squeeze out as much liquid as possible.

Step 2: Make the Patty Mixture

  • In a bowl, combine the grated zucchini, egg, almond flour, Parmesan (if using), garlic, cumin, smoked paprika, cayenne pepper, and parsley. Mix until well combined.

Step 3: Shape and Fry the Patties

  • Heat the olive oil in a large skillet over medium heat.
  • Scoop about 2 tablespoons of the mixture per patty and shape into small, flat discs.
  • Fry the patties in batches for 2–3 minutes per side, or until golden brown and crispy. Transfer to a plate lined with paper towels to drain excess oil.

Step 4: Make the Yogurt Dip

  • In a small bowl, mix the Greek yogurt, lemon juice, garlic, mint, salt, and pepper. Adjust seasoning to taste.
